A love affair with flavour, elegance and the art of patisserie.

Once upon a time in Paris...

Forget Emily in Paris, I was Rachel in Paris, ready to take on everything that the great City of Lights had to offer me. I drank, ate and indulged in culture, food, wine and good company and it was blissful.

So, who is Mademoiselle Macaron?

She isn't a person fictional or real, but rather, she is emblematic of that little bit of Parisian luxury I experienced when I took my first trip to Paris and bit into a vanilla macaron on the Champs-Élysées. 
I couldn't really afford to buy such an indulgent treat but its beautiful packaging and heavenly taste made it something I aspired to have as a treat whenever I could. 

From our kitchen in Edinburgh, our team are driven to capture this moment of luxury and indulgence with every macaron we make. Our award winning macarons truly are made with love from Paris via Edinburgh and onwards to you. 

Our Unforgettable Moment

For me, it was an unforgettable moment. Or as the Parisians say, un moment inoubliable.

When I first wandered into a local pâtisserie and life was never the same again. Inspired by these culinary jewels, these flavoursome miniature works of art, I enrolled in the school of iconic Chef Alain Ducasse. Where I learned the secrets of macarons made the right way. The Parisian way.

Back in Scotland I got to work. Creating new flavours of macarons, colourful, beautiful, délicieux. Always with a burning desire to not only recreate that first magical moment in the City of Lights, but to share it with others, wherever they might be....

While there, I went to the Alain Ducasse cookery school to learn how to make macarons. I had absolutely fallen in love with the jewel-like patisseries sold by Ladurée, Pierre Hermé, Fauchon and in every boulangerie I could find. 

I had returned to Scotland to finish my degree but the yearning for good, delicate, slightly chewy, flavourful macarons hadn't gone away and I couldn't find anywhere to match Paris' macarons standards.  
So, with my trusted recipes, I set to work and made macarons at home to sell at one of Edinburgh's food markets in July 2013. The rest they say, is history.
